Rich, creamy, chocolatey — and surprisingly light — this Chocolate Coconut Chia Mousse is proof that healthy desserts can still feel decadent.

Created by Vivien Cunha, this dairy-free recipe combines coconut milk, cocoa powder, chia seeds, and dates into a naturally sweet mousse that works as both a nutritious snack and an elegant dessert.

Beyond flavor, chia seeds also bring nutritional benefits. They are widely known for supporting digestion, adding fiber, and helping maintain balanced cholesterol levels. The dessert can also be customized with toppings such as fresh berries, granola, coconut cream, or dried coconut flakes.

Chef Vivien notes that maple syrup or honey is completely optional in this recipe.

“I personally don’t use it because the dates already provide enough sweetness for my palate,” she explains. “Taste the mousse first before deciding if you’d like additional sweetener.”

Unlike traditional mousse recipes that rely heavily on cream, eggs, or refined sugar, this version uses natural ingredients to create richness and flavor without becoming overly heavy.

The chia seeds also help thicken the mousse naturally after refrigeration, resulting in a smooth, pudding-like consistency.

Ingredients & Preparation

This recipe serves four people and comes together quickly with only a few wholesome ingredients. To prepare it, combine one can of coconut milk, four tablespoons of unsweetened cocoa powder, half a teaspoon of cinnamon powder, one teaspoon of vanilla extract, eight large pitted dates, and two tablespoons of chia seeds in a food processor or high-speed blender until the mixture becomes smooth and creamy. If desired, you can also add two tablespoons of maple syrup or honey for extra sweetness.

Once blended, pour the mousse evenly into four small ramekins or dessert glasses and refrigerate for at least one hour. Before serving, decorate with dried coconut flakes, and optionally add fresh berries, granola, or coconut cream for extra texture and flavor.
