For this Trout with Passion-Fruit Sauce recipe, you will need 4 small or medium trout, or halibut fillets if preferred; 50 ml of olive oil; 6 to 8 drops of malagueta, a Brazilian hot pepper; 100 ml of coconut milk; 50 ml of cream; 100 ml of fish or vegetable bouillon; 100 ml of passion-fruit juice, or 25 ml of concentrated passion-fruit juice combined with 1 teaspoon of sugar; ¼ of a small onion; 2 garlic cloves; 2 teaspoons of chopped parsley; 1 teaspoon of capers; 1 lime; salt and pepper to taste; carrots and broccoli cooked in water and salt; and baked potatoes.

How to Make Trout with Passion-Fruit Sauce

Marinate the trout with lime and set aside for a few minutes.

Later, place the fish in a baking dish with olive oil and salt. Bake in the oven at 450°F for approximately 20 minutes, or until lightly browned. Remember to turn the fish so that both sides bake evenly.

The Passion-Fruit Sauce

Brown the chopped onion and garlic with some olive oil and parsley in a skillet.

After 1 or 2 minutes, add the capers and the drops of malagueta. Pour in the coconut milk, cream, passion-fruit juice and fish or vegetable bouillon.

Season with salt and pepper to taste. Over medium heat, simmer until the sauce thickens and its volume is reduced by half.
